  • 1 cup creamy peanut butter
  • 1 egg
  • ¼ cup maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ¾ cup mini marshmallows
  • ½ cup dairy-free chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Grease an 8 inch skillet.
  2. In a bowl, beat together the peanut butter, egg, vanilla and maple syrup until creamy.
  3. Add baking soda, sea salt, chocolate chips and marshmallows and stir until just combined.
  4. Spoon batter into prepared skillet. Sprinkle with extra chocolate chips and mini marshmallows, if desired.
  5. Bake for 18-20 minutes or until toothpick inserted comes out clean.
