Baked Zucchini Fries

INGREDIENTS:
  • ½ cup grated Romano cheese

  • Non-stick cooking spray
  • 1½ pounds fresh zucchini
  • ½ cup all-purpose flour
  • 1 tablespoon milk
  • 1 sleeve Ritz crackers (3½ ounces in weight)
  • ½ cup panko bread crumbs
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 whole eggs
INSTRUCTIONS:
  1. Preheat oven to 450 degrees F.
  2. Trim the ends and cut the marrow in half. With a spoon, disappear any brobdingnagian seeds. (Small seeds can edict if the marrow are gnomish.)
